There is a difference between "Hanging Weight" and "Packaged Weight", approximately a 30% reduction between the two.
Hanging weight is the weight of the beef before processing. Packaged weight is the weight after processing and packaging. Processing done by the butcher who prepares standard cuts of meat we have listed ready for you to enjoy.
We sell by packaged weight. The processing fee if paid separately is approximately $280 which is included in our price.
